Cold-packing syrup usually guarantees mould will grow in bottled containers and can impart off-flavour in the syrup. The commercial maple industry has requested to the provincial government that hot packing be made mandatory for producers and regulated to prevent mould, to ensure food safety and to uphold the reputation of Ontario maple syrup as a quality product.
Maple researchers at the University of Maine and at Carleton University in Ontario are investigating whether current hot packing recommendations require refinement to preserve quality and prevent mould in syrup.
Mould growth often forms at the surface of the syrup Figure 1 in unopened containers that are improperly hot packed. Mould can also develop in maple syrup after the sealed container is opened and is not refrigerated during consumption. Always refrigerate maple syrup after opening sealed containers. Fresh maple syrup is usually filtered immediately after being drawn off the evaporator while it is still hot.

Fortunately, the solution is quick, simple, and inexpensive: Just run sap and syrup through a filter.
This article will teach you how to get rid of almost all sugar sand in pure maple syrup and filtering easily fits into the boiling and canning process. During boiling, you evaporate off the water and, with the sugar, those minerals become concentrated. Filtering removes the majority of these minerals to leave syrup clear. Professional sugar shacks use more complicated systems of filtering than described in this article and most also use hydrometers to measure the exact sugar content of finished syrup.
An important note here: Use food-grade filters designed for sugarmaking! This is the last material to touch your syrup and you want to make sure the flavor is protected and no harmful chemicals are introduced. Filters are available at many home improvement stores or online from sugarmaking suppliers such as Maple Tapper — find filters here. Before you get to pancakes, your syrup will be filtered three times. Each step is quick and only takes a few minutes. The lightweight prefilter will work but it may be necessary to rinse out partway through your batches.
As you collect sap — preferably daily — pour it through the thin prefilter. This will remove debris that has fallen into the sap.
This step is done midway through boiling when the sap gets to about degrees Fahrenheit. This typically is when boiling sap is moved to a finishing pan. Use only the lightweight prefilter for this step. Pour slowly and steadily remember this is hot! When done, just rinse this filter with hot water, do not twist or wring out, and set aside for the next step.
Do not use dish soap or detergents to clean filters as they can leave a residue which will affect the taste of syrup.
This is the last step and requires both filters. Make sure your container can fit under the filter! We experimented a bit until we found soup cans worked perfectly for our one-pint jars. Now you just need to wait for your syrup to hit the magic number of degrees. Once that occurs, just slowly pour it through the two filters and let drain into jars.
After each batch, simply rinse filters with hot water — no dish soap or detergents — and hang to dry until the next boiling. Do not wring or twist as this will break down the fibers and the filter will lose its shape.

Metal containers are also a viable option for storing maple syrup. This type of storage container represents a traditional way to store maple syrup. Now that we know what type of containers are options, we can begin the process of storing maple syrup.
Hot packing maple syrup — Once the sap has been processed to become maple syrup, it is ready to filter. It is best to filter syrup while it is hot to degrees Fahrenheit which helps the filtering process go fairly quick. It is important to remove any sediment through the filtering process. To filter, use white cotton or wool filters that can be acquired from a reputable maple syrup supplier.
Contamination of yeast and mold growth can be prevented when the syrup is packed hot in a sanitized container of food grade quality. According to Ohio State Universitysmall containers can be sanitized by boiling them in water for 10 minutes before using them. Filling any type of container may cause contamination so it is recommended by Ohio State University to invert the container immediately after being filled.
It is important to monitor the temperature of the syrup. If it is below degrees Fahrenheit after filtering it must be reheated to degrees Fahrenheit or above in order to pack the syrup hot. Be careful to not go over degrees Fahrenheit because that may darken the syrup, which would lower the grade of syrup. Store your syrup in a cool, dark place for up to two years until it is opened, then it must be stored in a refrigerator for up to about one year.
